🍽️ Creamy Pea Soup with Sausages

Ingredients
- 1 onion
- 1 tbsp rapeseed oil
- 550 g yellow peas (can, drained weight)
- 850 ml broth (preferably vegetable broth)
- 120 g poultry sausages (2 poultry sausages)
- 1 stalk lovage
- 75 ml cooking cream
- salt
- pepper
Instructions
- 1. Peel the onion.
- 2. Dice the onion finely.
- 3. Heat the oil in a pot.
- 4. Sauté the onion cubes until they are translucent.
- 5. Rinse the peas in a sieve.
- 6. Let the peas drain.
- 7. Add the peas to the onions in the pot.
- 8. Pour in the broth.
- 9. Bring the mixture to a boil.
- 10. Reduce the heat to medium.
- 11. Cover the pot.
- 12. Simmer the soup for 10 minutes.
- 13. Slice the poultry sausages.
- 14. Wash the lovage.
- 15. Shake the lovage dry.
- 16. Finely chop the lovage leaves.
- 17. Add the cream to the pot.
- 18. Puree the soup finely with a hand blender.
- 19. Add the sliced sausage pieces to the soup.
- 20. Add the chopped lovage to the soup.
- 21. Season the soup with salt.
- 22. Season the soup with pepper.
- 23. Bring the soup to a boil again.
- 24. Serve the soup immediately.
