🍽️ Creamy Pea Soup with Snow Peas

Ingredients
- 400 g peas (frozen)
- 1 shallot
- 1 tbsp butter
- 600 ml vegetable stock
- 100 ml whipping cream (min. 30% fat)
- salt
- white pepper
- 1 pinch nutmeg
- 1 tbsp lime juice
- 100 g snow peas
- 1 tbsp toasted white sesame seeds
Instructions
- 1. Let the peas thaw.
- 2. Peel the shallot and chop it finely.
- 3. Melt the butter in a pot.
- 4. Sauté the shallot in the butter until translucent.
- 5. Add three-quarters of the peas.
- 6. Sauté the peas briefly.
- 7. Deglaze the mixture with vegetable stock and cream.
- 8. Season the soup with salt, pepper, grated nutmeg, and lime juice.
- 9. Let the soup simmer gently for about 3 minutes with the lid on.
- 10. Puree the peas in the soup until smooth.
- 11. Optionally pass the soup through a sieve for an even finer texture.
- 12. Clean the snow peas.
- 13. Wash the snow peas thoroughly.
- 14. Let the snow peas drain.
- 15. Halve the snow peas in the middle or leave them whole, depending on their size.
- 16. Bring the pea soup back to a boil.
- 17. Add the remaining peas to the soup.
- 18. Add the snow peas to the soup.
- 19. Let the ingredients simmer gently for 1 to 2 minutes.
- 20. Serve the soup in bowls.
- 21. Sprinkle the finished soup with toasted sesame seeds.
