🍽️ Creamy Pea Soup with Fresh Basil

Ingredients
- 500 g peas
- 1 handful basil
- 1 stalk leek
- 150 g celeriac
- 1 onion
- 1 clove of garlic
- 2 tbsp butter
- 800 ml vegetable broth
- 100 ml whipping cream
- salt
- pepper (from the mill)
- nutmeg
Instructions
- 1. Thoroughly wash the peas and let them drain well in a sieve.
- 2. Wash the basil leaves and shake them dry.
- 3. Wash the leek, remove the tough ends, and slice it into thin rings.
- 4. Peel the celery, onion, and garlic.
- 5. Dice the celery, onion, and garlic into very small cubes.
- 6. Heat some butter in a pot.
- 7. Add the diced onions, celery, garlic, leek rings, and peas to the hot butter.
- 8. Sauté the vegetables for a few minutes until they become soft.
- 9. Pour the vegetable broth over the vegetables.
- 10. Let the soup simmer gently on low heat for about 20 minutes.
- 11. Set aside a small handful of basil leaves for decoration.
- 12. Add the remaining basil leaves and the cream to the pot.
- 13. Blend the soup until smooth and creamy using a hand blender.
- 14. Strain the soup through a fine sieve to make it even smoother.
- 15. Simmer the soup briefly if it is too thin.
- 16. Add a little more broth if the soup is too thick.
- 17. Season the soup to taste with salt, pepper, and a pinch of nutmeg.
- 18. Serve the hot soup and sprinkle the reserved basil leaves on top.
