🍽️ Creamy Pea Soup with Croutons

Ingredients
- 1 onion
- 1 clove garlic
- 1 tbsp rapeseed oil
- 70 ml dry white wine
- 300 g peas (frozen)
- 700 ml vegetable broth
- 200 ml whipping cream
- salt
- white pepper
- nutmeg (freshly grated)
- 2 tbsp lemon juice
- 1 handful basil
- 2 slices white bread
- 2 tbsp butter
Instructions
- 1. Peel the onion and the garlic.
- 2. Chop both ingredients very finely.
- 3. Heat the oil in a pot.
- 4. Sauté the onions and garlic until they are translucent.
- 5. Deglaze the mixture with the wine.
- 6. Add the peas to the pot.
- 7. Pour in the broth.
- 8. Simmer the soup over low heat with the lid closed for about 10 minutes.
- 9. Puree the soup finely with a hand blender.
- 10. Optionally press the mixture through a sieve to make it even smoother.
- 11. Pour the cream into the soup.
- 12. Season to taste with salt, pepper, nutmeg, and lemon juice.
- 13. Rinse the basil under cold water.
- 14. Shake the basil dry.
- 15. Cut the basil into thin strips.
- 16. Cut the bread into small cubes.
- 17. Fry the bread cubes in the hot butter for 2 to 3 minutes until golden brown.
- 18. Whisk the soup briefly until frothy.
- 19. Distribute the soup onto the plates.
- 20. Sprinkle the soup with the croutons and the basil.
- 21. Serve the soup immediately.
