🍽️ Peas with Black Salsify in Butter

Ingredients
- 400 g pea pod
- 600 g black salsify
- 1 onion
- 3 tbsp butter
- salt
- pepper (from the mill)
- 1 pinch sugar
- 100 ml vegetable broth
- 2 tbsp fresh chopped parsley
Instructions
- 1. Open the pea pods and remove the peas.
- 2. Wash the black salsify thoroughly.
- 3. Peel the black salsify.
- 4. Trim the ends of the black salsify.
- 5. Slice the black salsify diagonally into thin pieces (about 3 to 4 millimeters thick).
- 6. Peel the onion.
- 7. Dice the onion finely.
- 8. Melt half of the butter in a pan.
- 9. Sauté the onion cubes until translucent.
- 10. Add the peas and the black salsify slices to the pan.
- 11. Toss the vegetables briefly in the butter.
- 12. Season the vegetables with salt, pepper, and a pinch of sugar.
- 13. Deglaze the vegetables with the broth.
- 14. Cover the pan.
- 15. Simmer the vegetables on low heat for 6 to 8 minutes until tender.
- 16. If the liquid evaporates too quickly, add a little more broth.
- 17. Remove the pan from the heat.
- 18. Stir in the remaining cold butter and the chopped parsley into the vegetables.
- 19. Do not let the vegetables heat up further strongly.
- 20. Finally, adjust the seasoning of the dish with salt and pepper.
- 21. Serve the vegetables warm.
