  1. 1. Open the pea pods and remove the peas.
  2. 2. Wash the black salsify thoroughly.
  3. 3. Peel the black salsify.
  4. 4. Trim the ends of the black salsify.
  5. 5. Slice the black salsify diagonally into thin pieces (about 3 to 4 millimeters thick).
  6. 6. Peel the onion.
  7. 7. Dice the onion finely.
  8. 8. Melt half of the butter in a pan.
  9. 9. Sauté the onion cubes until translucent.
  10. 10. Add the peas and the black salsify slices to the pan.
  11. 11. Toss the vegetables briefly in the butter.
  12. 12. Season the vegetables with salt, pepper, and a pinch of sugar.
  13. 13. Deglaze the vegetables with the broth.
  14. 14. Cover the pan.
  15. 15. Simmer the vegetables on low heat for 6 to 8 minutes until tender.
  16. 16. If the liquid evaporates too quickly, add a little more broth.
  17. 17. Remove the pan from the heat.
  18. 18. Stir in the remaining cold butter and the chopped parsley into the vegetables.
  19. 19. Do not let the vegetables heat up further strongly.
  20. 20. Finally, adjust the seasoning of the dish with salt and pepper.
  21. 21. Serve the vegetables warm.
