🍽️ Peas with Hollandaise Sauce

Ingredients
- 600 g young peas
- 1 sprig dill
- chervil (1 sprig each)
- tarragon (1 sprig each)
- 100 g butter
- 2 egg yolks
- 1 tsp lemon juice
- salt
- pepper
Instructions
- 1. Bring one liter of salted water to a boil.
- 2. Add the peas to the boiling water.
- 3. Wash the herbs and tie them together.
- 4. Add the herb bundle to the peas.
- 5. Let everything simmer for about 10 minutes.
- 6. Drain the peas and remove the herbs.
- 7. Melt the butter in a pot.
- 8. Whisk the egg yolk with one tablespoon of water, lemon juice, salt, and pepper in a bowl.
- 9. Place the bowl in a hot water bath.
- 10. Whisk with a whisk until the mixture is creamy.
- 11. Stir the melted butter into the egg cream drop by drop.
- 12. Mix the peas in a bowl with the finished Hollandaise sauce.
