🍽️ Crispy Pea and Mint Patties with Yogurt Dip

Ingredients
- 600 g peas (freshly peeled or frozen)
- salt
- 3 sprigs mint
- 50 g feta cheese (9 % fat)
- 60 g whole wheat breadcrumbs (4 tbsp)
- 1 egg
- 5 g cornstarch (1 tsp)
- pepper
- cayenne pepper
- 10 g chives (0.5 bunch)
- 100 g yogurt (1,5 % fat)
- 2 tsp lemon juice
- 200 g salad mix
- 1 cucumber
- 2 tbsp rapeseed oil
Instructions
- 1. Bring water to a boil and add salt. Cook the peas in this salted water for 5 to 8 minutes.
- 2. Drain the peas and immediately rinse them with cold water to stop the cooking process. Let them drain well.
- 3. Take half of the drained peas and puree them finely using a hand blender.
- 4. Place the pea puree into a large bowl. Set the remaining half portion of whole peas aside.
- 5. Wash the mint and shake it dry. Pluck the leaves off the stems.
- 6. Finely chop the mint leaves.
- 7. Cut the feta cheese into small cubes.
- 8. Add the reserved whole peas, breadcrumbs, chopped mint, cheese cubes, egg, and starch to the pea puree in the bowl.
- 9. Mix all ingredients well until a firm dough forms.
- 10. Season the dough with salt, pepper, and cayenne pepper.
- 11. Let the dough rest for about 20 minutes to allow it to swell.
- 12. Wash the chives and shake them dry.
- 13. Cut the chives into small rings.
- 14. Whisk the yogurt with the lemon juice and chive rings in a small bowl.
- 15. Season the dressing with salt and pepper and taste to adjust.
- 16. Wash the salad mix and spin it dry.
- 17. Set the dry salad mix aside.
- 18. Peel the cucumber and wash it.
- 19. Slice the cucumber lengthwise into thin slices.
- 20. Heat 1 tablespoon of oil in a non-stick pan over medium heat.
- 21. Take 4 to 6 small portions of the dough and place them in the hot pan.
- 22. Fry the patties for 4 to 5 minutes on one side until golden brown.
- 23. Turn the patties and fry them for another 4 to 5 minutes on the other side.
- 24. Remove the finished patties from the pan.
- 25. Add more oil if necessary and repeat the process with the remaining dough until everything is cooked.
- 26. Place the baked patties on plates.
- 27. Add the salad mix and cucumber slices as a side.
- 28. Drizzle everything with the prepared yogurt dressing.
