🍽️ Creamy Pea and Potato Curry

Ingredients
- 300 g starchy cooking potatoes
- 300 g sweet potatoes
- 1 onion
- 3 cloves garlic
- 2 tbsp sprout oil
- 400 ml vegetable broth
- 200 ml whipping cream
- salt
- pepper (from the mill)
- 2 tbsp curry
- 150 g peas (frozen)
- 2 tbsp chopped parsley
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small, bite-sized cubes.
- 3. Peel the onion and the garlic.
- 4. Dice the onion and garlic very finely.
- 5. Heat the oil in a large pan.
- 6. Add the potato cubes, onions, and garlic to the hot pan.
- 7. Sauté the ingredients for about 5 minutes until they soften.
- 8. Deglaze the mixture with the vegetable broth.
- 9. Stir in the cream.
- 10. Season the curry with salt, pepper, and curry powder.
- 11. Let the curry simmer on medium heat for 20 to 25 minutes.
- 12. Rinse the peas under running water.
- 13. Let the peas drain well in a colander.
- 14. Fold the peas into the finished curry.
- 15. Warm the peas briefly in the curry.
- 16. Finally, adjust the seasoning with salt and pepper to taste.
- 17. Serve the curry on plates.
- 18. Garnish the dish with freshly chopped parsley.
