Ingredients
- 600 g Peaches
- 4 small duck breast fillets (à 150 g)
- salt
- pepper (from the mill)
- beet greens (for garnish)
Instructions
- 1. Wash the peaches thoroughly.
- 2. Dip the fruits into boiling water for about 1 minute.
- 3. Rinse the peaches immediately under cold water.
- 4. Peel the skin off the peaches.
- 5. Halve the fruits and remove the pits.
- 6. Cut the peach halves into wedges.
- 7. Wash the duck breasts.
- 8. Pat the meat dry with kitchen paper.
- 9. Remove the skin from the duck breasts.
- 10. Cut the meat into small cubes.
- 11. Thread the meat cubes and peach wedges alternately onto wooden skewers.
- 12. Preheat a grill pan or a grill.
- 13. Grill the skewers on all sides for a total of 6 to 8 minutes.
- 14. Season the skewers with salt and pepper.
- 15. Arrange the skewers in small bowls.
- 16. Garnish the dish with beet leaves.
