🍽️ Oven-baked duck legs with apples and prunes

Ingredients
- 150 g dried plums
- 150 ml dry red wine
- 4 duck legs (kitchen-ready)
- salt
- cayenne pepper
- 2 tbsp goose fat
- 3 apples (e.g. Boskop)
- 100 ml poultry stock
- 0.5 bunch thyme
- 3 bay leaves
- 30 g butter
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Place the dried plums in a pot and cover them with red wine.
- 3. Rinse the duck legs under running water and pat them dry thoroughly with a kitchen towel.
- 4. Season the duck legs generously with salt and cayenne pepper.
- 5. Melt the lard in a large casserole dish over high heat.
- 6. Sear the duck legs on all sides until they are golden brown.
- 7. Wash the apples, cut them in half, and remove the core.
- 8. Add the apple halves and the soaked plums along with the wine to the duck legs in the casserole dish.
- 9. Deglaze everything with some stock and add the herbs and spices.
- 10. Close the lid and place the casserole dish in the preheated oven.
- 11. Let the duck legs braise for 45 to 60 minutes.
- 12. Take the casserole dish out occasionally and brush the duck legs with melted butter.
- 13. Remove the casserole dish from the oven when the meat pieces are tender.
- 14. Plate the duck legs with the apples and plums.
- 15. Serve the dish immediately while hot.
