  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Place the dried plums in a pot and cover them with red wine.
  3. 3. Rinse the duck legs under running water and pat them dry thoroughly with a kitchen towel.
  4. 4. Season the duck legs generously with salt and cayenne pepper.
  5. 5. Melt the lard in a large casserole dish over high heat.
  6. 6. Sear the duck legs on all sides until they are golden brown.
  7. 7. Wash the apples, cut them in half, and remove the core.
  8. 8. Add the apple halves and the soaked plums along with the wine to the duck legs in the casserole dish.
  9. 9. Deglaze everything with some stock and add the herbs and spices.
  10. 10. Close the lid and place the casserole dish in the preheated oven.
  11. 11. Let the duck legs braise for 45 to 60 minutes.
  12. 12. Take the casserole dish out occasionally and brush the duck legs with melted butter.
  13. 13. Remove the casserole dish from the oven when the meat pieces are tender.
  14. 14. Plate the duck legs with the apples and plums.
  15. 15. Serve the dish immediately while hot.
