  2. 2. Boil the potatoes in water for about 15 minutes until they are almost, but not yet fully, soft.
  3. 3. Turn on the oven and set it to 250 degrees Celsius for top and bottom heat.
  4. 4. Wash the pears thoroughly.
  5. 5. Cut the pears into eight equal pieces.
  6. 6. Remove the core from the pear pieces.
  7. 7. Brush the pear pieces with one tablespoon of oil.
  8. 8. Season the pears with crushed white pepper and salt.
  9. 9. Wash the duck breast fillets.
  10. 10. Pat the duck breast fillets dry with a kitchen towel.
  11. 11. Score the skin of the duck breast in a diamond pattern.
  12. 12. Make sure to only cut the skin and not injure the underlying meat.
  13. 13. Season the duck breast with salt and pepper.
  14. 14. Heat a pan without adding extra fat.
  15. 15. Place the duck breast skin-side down in the hot pan.
  16. 16. Fry the skin side for about 5 minutes until golden brown.
  17. 17. Turn the duck breast over.
  18. 18. Fry the meat side only briefly until the pores close.
  19. 19. Remove the duck breast from the pan.
  20. 20. Brush the skin side of the duck breast with honey.
  21. 21. Place the duck breast in the preheated oven.
  22. 22. Bake the duck breast for about 10 minutes until it is pink inside.
  23. 23. Peel the garlic.
  24. 24. Finely chop the garlic.
  25. 25. Sauté the garlic briefly in hot butter.
  26. 26. Add the spinach to the pan.
  27. 27. Let the spinach wilt.
  28. 28. Season the spinach with salt and nutmeg.
  29. 29. Let the liquid in the spinach evaporate.
  30. 30. Remove the duck breast from the oven.
  31. 31. Let the duck breast rest briefly.
  32. 32. Plate the duck breast together with the potatoes and pears on top of the spinach.
  33. 33. Serve the dish.
