🍽️ Crispy Duck Breast with Sweet Grilled Pears and Spinach

Ingredients
- 8 small waxy potatoes
- 4 pears
- 2 tbsp olive oil
- 1 tbsp white peppercorns
- sea salt
- 4 duck breast fillets (each approx. 200 g)
- pepper (from the mill)
- 2 tbsp honey
- 250 g fresh leaf spinach
- 2 garlic cloves
- 1 tbsp butter
- nutmeg
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in water for about 15 minutes until they are almost, but not yet fully, soft.
- 3. Turn on the oven and set it to 250 degrees Celsius for top and bottom heat.
- 4. Wash the pears thoroughly.
- 5. Cut the pears into eight equal pieces.
- 6. Remove the core from the pear pieces.
- 7. Brush the pear pieces with one tablespoon of oil.
- 8. Season the pears with crushed white pepper and salt.
- 9. Wash the duck breast fillets.
- 10. Pat the duck breast fillets dry with a kitchen towel.
- 11. Score the skin of the duck breast in a diamond pattern.
- 12. Make sure to only cut the skin and not injure the underlying meat.
- 13. Season the duck breast with salt and pepper.
- 14. Heat a pan without adding extra fat.
- 15. Place the duck breast skin-side down in the hot pan.
- 16. Fry the skin side for about 5 minutes until golden brown.
- 17. Turn the duck breast over.
- 18. Fry the meat side only briefly until the pores close.
- 19. Remove the duck breast from the pan.
- 20. Brush the skin side of the duck breast with honey.
- 21. Place the duck breast in the preheated oven.
- 22. Bake the duck breast for about 10 minutes until it is pink inside.
- 23. Peel the garlic.
- 24. Finely chop the garlic.
- 25. Sauté the garlic briefly in hot butter.
- 26. Add the spinach to the pan.
- 27. Let the spinach wilt.
- 28. Season the spinach with salt and nutmeg.
- 29. Let the liquid in the spinach evaporate.
- 30. Remove the duck breast from the oven.
- 31. Let the duck breast rest briefly.
- 32. Plate the duck breast together with the potatoes and pears on top of the spinach.
- 33. Serve the dish.
