🍽️ Duck Breast on Oranges

Ingredients
- 150 g mixed salad (red lamb's lettuce, purslane and arugula)
- 2 oranges
- 0.5 orange (squeezed)
- 1 tsp honey
- 1 tbsp vinegar (white)
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 2 tbsp whole cranberries (from the jar e.g. from Natreen)
- 12 slices smoked duck breast fillet (from the butcher)
- 4 slices toast bread
Instructions
- 1. Wash the salad thoroughly.
- 2. Shake the salad dry.
- 3. Tear the salad into bite-sized pieces.
- 4. Peel the oranges with a sharp knife.
- 5. Remove the white pith as well.
- 6. Cut the orange segments out of the membranes.
- 7. Place the orange segments on four plates.
- 8. Distribute the salad loosely over the oranges.
- 9. Put all ingredients for the marinade into a bowl.
- 10. Mix the marinade thoroughly.
- 11. Season the marinade to taste.
- 12. Drizzle the marinade over the salad.
- 13. Top the dish with duck breast slices.
- 14. Add drained cranberries.
- 15. Toast the bread slices.
- 16. Cut stars out of the toast bread.
- 17. Place the toast stars decoratively next to the salad.
- 18. Serve the dish immediately.
