  1. 1. Rinse the duck breast thoroughly and pat it dry with a kitchen towel.
  2. 2. Cut the meat into coarse cubes.
  3. 3. Place the morels in lukewarm water for 5 minutes to soften them.
  4. 4. Remove the morels from the water, squeeze them well, and cut them in half.
  5. 5. Peel the garlic and chop it finely.
  6. 6. Take the pineapple out of the can, let it drain, and cut it into pieces.
  7. 7. Peel the cucumber and cut it into pieces.
  8. 8. Peel the onion and dice it finely.
  9. 9. Clean the spring onions, wash them, and cut them into thin strips.
  10. 10. Pour hot water over the tomatoes, shock them immediately in cold water, and peel them.
  11. 11. Remove the flesh of the tomatoes and chop it coarsely.
  12. 12. Add vinegar, honey, soy sauce, sugar, tomato paste, and the chopped garlic to a high pot.
  13. 13. Bring the sauce in the pot to a boil.
  14. 14. Mix the cornstarch with a little cold water until you have a smooth mixture.
  15. 15. Stir the starch-water mixture into the boiling sauce.
  16. 16. Let the sauce boil briefly again until it thickens.
  17. 17. Place the duck pieces on a serving plate.
  18. 18. Pour the hot sauce directly over the duck breast.
