🍽️ Sweet and Sour Duck Breast

Ingredients
- 400 g duck breast fillet (-meat)
- 4 dried Chinese morels
- 2 garlic cloves
- 2 slices pineapple (from the can)
- 50 g cucumber
- 1 onion
- 2 spring onions
- 2 tomatoes
- 3 tbsp white wine vinegar
- 4 tbsp honey
- 1 tbsp soy sauce
- 2 tbsp palm sugar
- 1 tbsp tomato paste
- 2 tsp cornstarch
- 4 tbsp flour
- 0.5 l vegetable oil
- salt (pepper)
Instructions
- 1. Rinse the duck breast thoroughly and pat it dry with a kitchen towel.
- 2. Cut the meat into coarse cubes.
- 3. Place the morels in lukewarm water for 5 minutes to soften them.
- 4. Remove the morels from the water, squeeze them well, and cut them in half.
- 5. Peel the garlic and chop it finely.
- 6. Take the pineapple out of the can, let it drain, and cut it into pieces.
- 7. Peel the cucumber and cut it into pieces.
- 8. Peel the onion and dice it finely.
- 9. Clean the spring onions, wash them, and cut them into thin strips.
- 10. Pour hot water over the tomatoes, shock them immediately in cold water, and peel them.
- 11. Remove the flesh of the tomatoes and chop it coarsely.
- 12. Add vinegar, honey, soy sauce, sugar, tomato paste, and the chopped garlic to a high pot.
- 13. Bring the sauce in the pot to a boil.
- 14. Mix the cornstarch with a little cold water until you have a smooth mixture.
- 15. Stir the starch-water mixture into the boiling sauce.
- 16. Let the sauce boil briefly again until it thickens.
- 17. Place the duck pieces on a serving plate.
- 18. Pour the hot sauce directly over the duck breast.
