🍽️ Marinated Duck Breast Skewers with Creamy Plum Sauce

Ingredients
- 2 duck breast fillets (approx. 350 g each)
- 4 tbsp orange juice
- 2 tbsp soy sauce
- 1 garlic clove
- 1 tsp sambal oelek
- 0.5 tsp cumin
- 1 tsp coriander
- 400 g plums
- 100 ml plum juice
- 1 tbsp lemon juice
- 3 tbsp plum puree
- salt
- pepper (freshly ground)
- oil (for frying)
- 20 wooden skewers
Instructions
- 1. Rinse the duck breast fillets under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the duck breast lengthwise into about 20 thin strips.
- 4. Make sure each strip is about 0.5 centimeters thick.
- 5. Thread the meat strips accordion-style onto a wooden skewer.
- 6. Pour the orange juice and soy sauce into a shallow dish.
- 7. Peel the garlic.
- 8. Press the garlic directly into the dish.
- 9. Add half a teaspoon of sambal oelek (hot chili paste).
- 10. Add half a teaspoon of cumin.
- 11. Add half a teaspoon of ground coriander.
- 12. Mix all marinade ingredients well.
- 13. Place the duck skewers into the marinade.
- 14. Let the skewers marinate for about 3 hours.
- 15. Wash the plums.
- 16. Halve the plums.
- 17. Remove the pits from the plum halves.
- 18. Place the plums in a pot.
- 19. Add the plum juice to the pot.
- 20. Add the lemon juice to the pot.
- 21. Add the remaining sambal oelek to the pot.
- 22. Add the remaining coriander to the pot.
- 23. Simmer the mixture over medium heat.
- 24. Cook the mixture for about 10 minutes.
- 25. Remove the pot from the heat.
- 26. Stir the plum puree into the mixture.
- 27. Blend the mixture until smooth with a blender.
- 28. Season the sauce with salt.
- 29. Season the sauce with pepper.
- 30. Let the sauce cool down.
- 31. Heat oil in a pan.
- 32. Fry the skewers in batches.
- 33. Fry the skewers over high heat.
- 34. Fry the skewers for about 3 minutes on one side.
- 35. Fry the skewers for about 3 minutes on the other side.
- 36. Fry the skewers until they are browned.
- 37. Season the finished skewers with salt.
- 38. Season the finished skewers with pepper.
- 39. Serve the skewers together with the plum sauce.
