  1. 1. Rinse the duck breast fillets under cold water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut the duck breast lengthwise into about 20 thin strips.
  4. 4. Make sure each strip is about 0.5 centimeters thick.
  5. 5. Thread the meat strips accordion-style onto a wooden skewer.
  6. 6. Pour the orange juice and soy sauce into a shallow dish.
  7. 7. Peel the garlic.
  8. 8. Press the garlic directly into the dish.
  9. 9. Add half a teaspoon of sambal oelek (hot chili paste).
  10. 10. Add half a teaspoon of cumin.
  11. 11. Add half a teaspoon of ground coriander.
  12. 12. Mix all marinade ingredients well.
  13. 13. Place the duck skewers into the marinade.
  14. 14. Let the skewers marinate for about 3 hours.
  15. 15. Wash the plums.
  16. 16. Halve the plums.
  17. 17. Remove the pits from the plum halves.
  18. 18. Place the plums in a pot.
  19. 19. Add the plum juice to the pot.
  20. 20. Add the lemon juice to the pot.
  21. 21. Add the remaining sambal oelek to the pot.
  22. 22. Add the remaining coriander to the pot.
  23. 23. Simmer the mixture over medium heat.
  24. 24. Cook the mixture for about 10 minutes.
  25. 25. Remove the pot from the heat.
  26. 26. Stir the plum puree into the mixture.
  27. 27. Blend the mixture until smooth with a blender.
  28. 28. Season the sauce with salt.
  29. 29. Season the sauce with pepper.
  30. 30. Let the sauce cool down.
  31. 31. Heat oil in a pan.
  32. 32. Fry the skewers in batches.
  33. 33. Fry the skewers over high heat.
  34. 34. Fry the skewers for about 3 minutes on one side.
  35. 35. Fry the skewers for about 3 minutes on the other side.
  36. 36. Fry the skewers until they are browned.
  37. 37. Season the finished skewers with salt.

  39. 39. Serve the skewers together with the plum sauce.
