🍽️ Crispy Duck Breast on Fresh Glass Noodle Salad

Ingredients
- 75 g glass noodles
- 250 g duck breast fillet (1 duck breast fillet)
- salt
- pepper
- 1 cucumber
- 1 red onion
- 1 lime
- 1 tbsp Thai fish sauce
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp sesame oil
- 4 sprigs Thai basil (or mint)
- 1 tbsp peanuts
Instructions
- 1. Cook the glass noodles according to the package instructions or soak them in hot water.
- 2. Rinse the duck breast fillet under cold water and pat it dry with a kitchen towel.
- 3. Use a sharp knife to lightly score a diamond pattern into the skin of the meat.
- 4. Place the duck breast skin-side down in a cold pan.
- 5. Fry the breast over medium heat for about 8 to 9 minutes until the skin is crispy.
- 6. Turn the duck breast over and place it on the meat side.
- 7. Season the meat lightly with salt and pepper.
- 8. Finish cooking the meat side for another 2 to 3 minutes.
- 9. Remove the duck breast from the pan.
- 10. Wrap the meat loosely in aluminum foil.
- 11. Let the meat rest for a few minutes.
- 12. Drain the glass noodles well.
- 13. Cut the noodles into smaller pieces using kitchen scissors.
- 14. Place the noodles in a large bowl.
- 15. Wash the cucumber thoroughly and dry it.
- 16. Slice the cucumber thinly, either using a vegetable peeler or a knife.
- 17. Peel the onion and cut it into thin strips.
- 18. Add the cucumber slices and onion strips to the noodles.
- 19. Squeeze the lime to extract the juice.
- 20. Whisk the lime juice, fish sauce, soy sauce, and honey together in a small bowl.
- 21. Whisk the oil into the sauce using a whisk.
- 22. Pour the sauce over the noodles and vegetables and mix everything well.
- 23. Wash the basil and shake it dry.
- 24. Pluck the basil leaves from the stems.
- 25. Chop the leaves roughly.
- 26. Fold the chopped basil leaves into the salad.
- 27. Slice the duck breast into thin slices.
- 28. Place the salad on the plates.
- 29. Place the duck breast slices on top of the salad.
- 30. Roughly chop the peanuts.
- 31. Sprinkle the chopped peanuts over the finished dish.
