  1. 1. Cook the glass noodles according to the package instructions or soak them in hot water.
  2. 2. Rinse the duck breast fillet under cold water and pat it dry with a kitchen towel.
  3. 3. Use a sharp knife to lightly score a diamond pattern into the skin of the meat.
  4. 4. Place the duck breast skin-side down in a cold pan.
  5. 5. Fry the breast over medium heat for about 8 to 9 minutes until the skin is crispy.
  6. 6. Turn the duck breast over and place it on the meat side.
  7. 7. Season the meat lightly with salt and pepper.
  8. 8. Finish cooking the meat side for another 2 to 3 minutes.
  9. 9. Remove the duck breast from the pan.
  10. 10. Wrap the meat loosely in aluminum foil.
  11. 11. Let the meat rest for a few minutes.
  12. 12. Drain the glass noodles well.
  13. 13. Cut the noodles into smaller pieces using kitchen scissors.
  14. 14. Place the noodles in a large bowl.
  15. 15. Wash the cucumber thoroughly and dry it.
  16. 16. Slice the cucumber thinly, either using a vegetable peeler or a knife.
  17. 17. Peel the onion and cut it into thin strips.
  18. 18. Add the cucumber slices and onion strips to the noodles.
  19. 19. Squeeze the lime to extract the juice.
  20. 20. Whisk the lime juice, fish sauce, soy sauce, and honey together in a small bowl.
  21. 21. Whisk the oil into the sauce using a whisk.
  22. 22. Pour the sauce over the noodles and vegetables and mix everything well.
  23. 23. Wash the basil and shake it dry.
  24. 24. Pluck the basil leaves from the stems.
  25. 25. Chop the leaves roughly.
  26. 26. Fold the chopped basil leaves into the salad.
  27. 27. Slice the duck breast into thin slices.
