🍽️ Duck Wok with Onions and Snow Peas

Ingredients
- 2 cm fresh ginger
- 2 garlic cloves
- 3 tbsp dark soy sauce
- 1 tsp honey
- soy oil
- 600 g duck breast fillet (kitchen-ready)
- 400 g snow peas
- salt
- 300 g onions
- 1 tbsp oyster sauce
- pepper (from the mill)
- 2 tbsp chopped parsley
Instructions
- 1. Peel the ginger and the garlic clove.
- 2. Finely chop the ginger and garlic.
- 3. Mix the chopped ginger and garlic with the soy sauce, 4 tablespoons of soybean oil, and the honey.
- 4. Wash the duck meat and pat it dry with a kitchen towel.
- 5. Cut the meat into thin strips.
- 6. Mix the meat strips with the marinade.
- 7. Let the meat marinate for about 30 minutes.
- 8. Wash the snow peas under running water.
- 9. Remove the tough strings and ends of the snow peas.
- 10. Bring water with salt to a boil.
- 11. Cook the snow peas for 3 to 4 minutes in the boiling salted water (this is called blanching).
- 12. Drain the snow peas.
- 13. Immediately shock the peas with cold water to stop the cooking process.
- 14. Let the snow peas drain well.
- 15. Cut the snow peas diagonally into wide pieces.
- 16. Peel the onions.
- 17. Halve the onions.
- 18. Cut the onion halves into thin strips.
- 19. Take the meat out of the marinade.
- 20. Let the meat drain slightly.
- 21. Heat 2 tablespoons of oil in a hot wok.
- 22. Fry the meat thoroughly on all sides.
- 23. Remove the fried meat from the wok.
- 24. Set the meat aside.
- 25. Add the onion strips and the snow peas to the wok.
- 26. Sauté the vegetables briefly.
- 27. Add the duck meat back into the wok.
- 28. Pour the remaining marinade over the dish.
- 29. Add the oyster sauce.
- 30. Season the dish with pepper.
- 31. Plate the food.
- 32. Sprinkle the dish with parsley.
- 33. Serve the wok dish.
