  1. 1. Peel the ginger and the garlic clove.
  2. 2. Finely chop the ginger and garlic.
  3. 3. Mix the chopped ginger and garlic with the soy sauce, 4 tablespoons of soybean oil, and the honey.
  4. 4. Wash the duck meat and pat it dry with a kitchen towel.
  5. 5. Cut the meat into thin strips.
  6. 6. Mix the meat strips with the marinade.
  7. 7. Let the meat marinate for about 30 minutes.
  8. 8. Wash the snow peas under running water.
  9. 9. Remove the tough strings and ends of the snow peas.
  10. 10. Bring water with salt to a boil.
  11. 11. Cook the snow peas for 3 to 4 minutes in the boiling salted water (this is called blanching).
  12. 12. Drain the snow peas.
  13. 13. Immediately shock the peas with cold water to stop the cooking process.
  14. 14. Let the snow peas drain well.
  15. 15. Cut the snow peas diagonally into wide pieces.
  16. 16. Peel the onions.
  17. 17. Halve the onions.
  18. 18. Cut the onion halves into thin strips.
  19. 19. Take the meat out of the marinade.
  20. 20. Let the meat drain slightly.
  21. 21. Heat 2 tablespoons of oil in a hot wok.
  22. 22. Fry the meat thoroughly on all sides.
  23. 23. Remove the fried meat from the wok.
  24. 24. Set the meat aside.
  25. 25. Add the onion strips and the snow peas to the wok.
  26. 26. Sauté the vegetables briefly.
  27. 27. Add the duck meat back into the wok.
  28. 28. Pour the remaining marinade over the dish.
  29. 29. Add the oyster sauce.
  30. 30. Season the dish with pepper.
  31. 31. Plate the food.
  32. 32. Sprinkle the dish with parsley.
  33. 33. Serve the wok dish.
