  1. 1. Rinse the duck breasts under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut the breasts into thin strips about 0.5 centimeters thick.
  4. 4. Thread each meat strip onto a wooden skewer in an accordion-like fold.
  5. 5. Pour the orange juice and soy sauce into a shallow dish.
  6. 6. Peel the garlic clove and press it directly into the liquid.
  7. 7. Add half a teaspoon of sambal oelek (hot chili paste) to the dish.
  8. 8. Add half a teaspoon of ground coriander to the dish.
  9. 9. Stir the marinade well with a spoon until it is homogeneous.
  10. 10. Place the duck skewers into the marinade.
  11. 11. Let the skewers marinate for about 3 hours.
  12. 12. Rinse the plums under cold water.
  13. 13. Halve the plums and remove the pits.
  14. 14. Place the plum pieces into a saucepan.
  15. 15. Pour the plum juice into the pot.
  16. 16. Pour the lemon juice into the pot.
  17. 17. Add the remaining sambal oelek to the pot.
  18. 18. Add the remaining ground coriander to the pot.
  19. 19. Heat the pot on medium heat.
  20. 20. Let the mixture simmer for about 10 minutes.
  21. 21. Remove the pot from the stove.
  22. 22. Stir the plum puree into the warm mixture.
  23. 23. Puree the sauce until smooth using a hand blender or a fork.
  24. 24. Season the sauce with salt and pepper to taste.
  25. 25. Let the sauce cool down completely.
  26. 26. Pour some oil into a frying pan.
  27. 27. Heat the oil in the pan.
  28. 28. Place the duck skewers in batches into the hot pan.
  29. 29. Fry the skewers on both sides over high heat.
  30. 30. Fry the skewers for about 3 minutes per side.
  31. 31. Season the finished skewers with salt and pepper.
  32. 32. Serve the skewers together with the cooled plum sauce.
