🍽️ Marinated Duck Skewers with Plum Dip

Ingredients
- 700 g duck breast fillet (2 duck breasts)
- 4 tbsp orange juice
- 2 tbsp soy sauce
- 1 garlic clove
- 1 tsp sambal oelek
- 0.5 tsp ground cumin
- 1 tsp ground coriander
- 400 g fresh plums
- 100 ml plum juice
- 1 tbsp lemon juice
- 3 tbsp plum puree
- salt
- pepper (from the mill)
- oil (for frying)
- 20 long wooden skewers
Instructions
- 1. Rinse the duck breasts under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the breasts into thin strips about 0.5 centimeters thick.
- 4. Thread each meat strip onto a wooden skewer in an accordion-like fold.
- 5. Pour the orange juice and soy sauce into a shallow dish.
- 6. Peel the garlic clove and press it directly into the liquid.
- 7. Add half a teaspoon of sambal oelek (hot chili paste) to the dish.
- 8. Add half a teaspoon of ground coriander to the dish.
- 9. Stir the marinade well with a spoon until it is homogeneous.
- 10. Place the duck skewers into the marinade.
- 11. Let the skewers marinate for about 3 hours.
- 12. Rinse the plums under cold water.
- 13. Halve the plums and remove the pits.
- 14. Place the plum pieces into a saucepan.
- 15. Pour the plum juice into the pot.
- 16. Pour the lemon juice into the pot.
- 17. Add the remaining sambal oelek to the pot.
- 18. Add the remaining ground coriander to the pot.
- 19. Heat the pot on medium heat.
- 20. Let the mixture simmer for about 10 minutes.
- 21. Remove the pot from the stove.
- 22. Stir the plum puree into the warm mixture.
- 23. Puree the sauce until smooth using a hand blender or a fork.
- 24. Season the sauce with salt and pepper to taste.
- 25. Let the sauce cool down completely.
- 26. Pour some oil into a frying pan.
- 27. Heat the oil in the pan.
- 28. Place the duck skewers in batches into the hot pan.
- 29. Fry the skewers on both sides over high heat.
- 30. Fry the skewers for about 3 minutes per side.
- 31. Season the finished skewers with salt and pepper.
- 32. Serve the skewers together with the cooled plum sauce.
