  1. 1. Wash the duck thoroughly and pat it dry with a kitchen towel. Cut off the wing tips and chop them roughly. Rub the entire bird inside and out with salt and pepper.
  2. 2. Peel the onions and the apple. Remove the core from the apple. Cut everything into coarse cubes. Mix the cubes with the herbs. Fill the mixture into the duck. Secure the opening with wooden skewers. Place the duck breast-side down in a roasting pan. Pour about 500 milliliters of water in. Roast the duck in the oven at 160 degrees Celsius for about 2 hours until golden brown. Turn the duck after one hour. Baste the duck several times during roasting with the pan juices.
  3. 3. Cut the white bread into small cubes. Toast the cubes in a pan without fat until golden brown.
  4. 4. Stir the yeast smoothly into the milk. Put flour, egg, egg yolk, and the remaining milk into a mixing bowl. Add the yeast milk. Process everything into a smooth dough. Mix the toasted bread cubes into the dough. Cover the bowl. Let the dough rise in a warm place for 45 minutes.
  5. 5. Bring plenty of salted water to a boil in a pot. Shape the dumpling dough into about 4 rolls with a diameter of 4 centimeters. Wrap each roll individually in aluminum foil. Place the rolls in the boiling water. Reduce the temperature. Cook the dumplings in the simmering water for 35 to 40 minutes.
  6. 6. Remove the duck from the roasting pan. Cut it in half lengthwise. Remove the stuffing. Cut the duck halves crosswise into two pieces. Keep the pieces warm in the oven at 70 degrees Celsius. Defat the pan juices thoroughly. Fry the duck wings in 1/2 tablespoon of butter in a pot until well browned. Deglaze with the pan juices. Add the stuffing and poultry stock. Simmer the sauce for 15 to 20 minutes. Strain the sauce through a sieve into a second pot. Season with salt and pepper. Keep the sauce warm.
  7. 7. Wash the small red apples. Cut them crosswise into slices about 1 centimeter thick. Heat the remaining butter in a large pan. Fry the apple slices briefly on both sides. Keep them warm.
  8. 8. Turn on the oven grill shortly before serving. Grill the duck pieces with the skin side up until crispy. Cut the dumplings into thick slices.
  9. 9. Optionally remove the breast from the bone and slice it. Arrange the duck on pre-warmed plates. Serve it with the sauce as well as the apple and dumpling slices.
