🍽️ Crispy Duck with Sweet Pears

Ingredients
- 1 small duck (approx. 1.2 kg, ready for the kitchen)
- salt
- pepper (from the mill)
- 4 small pears
- 30 g butter
- 0.25 tsp cinnamon
- 1 vanilla pod
Instructions
- 1. Rinse the duck under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Rub the outer and inner surfaces generously with salt and pepper.
- 4. Slice the vanilla pod lengthwise.
- 5. Scrape out the seeds (caviar) using the back of a knife.
- 6. Mix the vanilla seeds thoroughly with the butter.
- 7. Coat the duck evenly with the vanilla butter mixture.
- 8. Place the duck breast-side down in a roasting pan.
- 9. Pour about 150 milliliters of water into the pan.
- 10. Roast the duck in the preheated oven at 160 degrees Celsius for 35 minutes.
- 11. Turn the duck so that the breast side is now facing up.
- 12. Increase the oven temperature to 250 degrees Celsius.
- 13. Roast the duck for another 15 minutes.
- 14. Baste the duck several times with the pan juices during the roasting time.
- 15. Peel the pears 15 minutes before the end of the cooking time.
- 16. Place the peeled pears into the roasting pan.
- 17. Sprinkle cinnamon over the pears.
- 18. Season the pears lightly with salt and pepper.
- 19. Remove the finished duck from the oven.
- 20. Arrange the duck together with the pears on a large platter.
