🍽️ Crispy Duck with Apple and Shallot Stuffing

Ingredients
- 1 Duck (approx. 2,5 kg)
- 4 Shallots
- 2 Apples
- 2 Sprigs Rosemary
- Salt
- Pepper (from the mill)
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Set the heating function to top and bottom heat.
- 2. Rinse the duck under running water. Pat it dry inside and out with a kitchen towel.
- 3. Peel the shallots. Cut them into wedges.
- 4. Peel the apples. Cut them into quarters. Remove the core. Cut the apple pieces into wedges as well.
- 5. Place the shallots and apples into a bowl.
- 6. Strip the rosemary needles from the stems. Mix them into the apple and shallot mixture.
- 7. Season the apple filling with salt and pepper.
- 8. Season the duck inside and out generously with salt and pepper.
- 9. Stuff the duck with the apple and shallot mixture.
- 10. Close the opening of the duck with kitchen twine.
- 11. Place the duck in a roasting pan. Position it with the breast side facing down.
- 12. Pour about 500 milliliters of water into the roasting pan.
- 13. Roast the duck in the preheated oven for approx. 2 hours.
- 14. Take the duck out of the oven. Remove the kitchen twine.
- 15. Carve the duck. Arrange it on a platter. Stuff the filling back into the duck or serve it separately. Serve the duck immediately.
