  2. 2. Quarter the apples and remove the core.
  3. 3. Cut the apple quarters into bite-sized pieces.
  4. 4. Rinse the duck breast fillets under cold water.
  5. 5. Pat the fillets dry with a kitchen towel.
  6. 6. Score the duck skin in a diamond pattern.
  7. 7. Season the duck breast with salt and pepper.
  8. 8. Heat a pan over medium heat.
  9. 9. Place the duck breast skin-side down in the hot pan.
  10. 10. Fry the skin side for about 5 minutes until golden brown.
  11. 11. Turn the duck breast and fry the other side briefly.
  12. 12. Place the duck breast on a baking sheet lined with baking paper.
  13. 13. Brush the duck breast lightly with honey.
  14. 14. Distribute the apple pieces around the duck breast.
  15. 15. Lightly salt the apples.
  16. 16. Drizzle the remaining honey over the apples.
  17. 17. Place sprigs of thyme on the duck breast and apples.
  18. 18. Preheat the oven to 120 degrees Celsius (convection 100 degrees Celsius or gas mark 1).
