🍽️ Crispy Duck with Orange Sauce

Ingredients
- 1 duck (approx. 2 kg, prepared for kitchen)
- salt
- pepper from the mill
- 2 tsp dried thyme
- 500 ml poultry broth (possibly more)
- 2 tbsp honey
- 4 small oranges
- 2 oranges (juice)
Instructions
- 1. Season the duck inside and out with salt and pepper.
- 2. Season the inside further with fresh thyme, a little salt, and pepper.
- 3. Place the duck in a large roasting pan.
- 4. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 5. Roast the duck in the preheated oven for about one and a half hours.
- 6. Gradually pour some broth into the roasting pan during roasting to keep the meat juicy.
- 7. Wash the oranges thoroughly under hot water.
- 8. Cut the oranges in half.
- 9. Skim off the excess fat from the roasting pan.
- 10. Place the oranges in the roasting pan with the cut side facing down.
- 11. Add the oranges about half an hour before the end of the cooking time.
- 12. Mix the honey with a little of the roasting juices.
- 13. Brush the duck with the honey and juice mixture ten minutes before the end of the cooking time.
- 14. Remove the finished duck from the oven.
- 15. Defat the sauce in the roasting pan again if necessary.
- 16. Strain the sauce through a fine sieve.
- 17. Pour the orange juice into the sauce and bring it to a boil.
- 18. Let the sauce reduce slightly until it thickens a bit.
- 19. Finally, season the sauce to taste with salt and pepper.
- 20. Serve the duck together with the roasted oranges and the sauce.
