🍳 English Breakfast with Soy Sausages

Ingredients
- 300 g cherry tomatoes
- 250 g brown mushrooms
- 3 tbsp olive oil
- salt
- pepper
- 1 can white beans (drained weight 250 g)
- 1 onion
- 1 tsp whole cane sugar
- 2 tbsp tomato paste
- 200 g chopped tomatoes
- 2 tsp soy sauce
- 1 tsp white wine vinegar
- 1 pinch chili flakes
- 4 soy sausages
- 4 tsp butter
- 1 handful parsley
Instructions
- 1. Wash the cherry tomatoes thoroughly.
- 2. Let the tomatoes drain well in a sieve.
- 3. Clean the mushrooms.
- 4. Cut the mushrooms into halves or quarters depending on their size.
- 5. Pat the tomatoes and mushrooms dry.
- 6. Preheat the oven to 180 degrees Celsius conventional heat.
- 7. Brush a baking dish with half a tablespoon of oil.
- 8. Place the tomatoes and mushrooms side by side in the dish.
- 9. Season the vegetables with salt and pepper.
- 10. Bake the vegetables in the oven for 20 to 25 minutes.
- 11. Drain the beans in a sieve.
- 12. Peel the onion.
- 13. Chop the onion finely.
- 14. Heat one tablespoon of oil in a pan.
- 15. Fry the onions in the pan.
- 16. Add sugar and tomato paste to the pan.
- 17. Fry the mixture briefly.
- 18. Deglaze the mixture with chopped tomatoes.
- 19. Let the sauce simmer for 5 minutes.
- 20. Add the beans to the sauce.
- 21. Season the beans with salt and pepper.
- 22. Add soy sauce to the pan.
- 23. Add apple cider vinegar to the pan.
- 24. Add chili flakes to the pan.
- 25. Grease a second baking dish with half a tablespoon of oil.
- 26. Fill the bean mixture into the second dish.
- 27. Place the beans in the oven for 5 minutes.
- 28. Remove the vegetables from the oven.
- 29. Bake the beans for another 5 to 7 minutes.
- 30. Heat a second pan.
- 31. Add the remaining oil to the pan.
- 32. Fry the soy sausages on all sides.
- 33. Melt butter in the first pan.
- 34. Fry four sunny-side-up eggs in the butter.
- 35. Season the eggs with salt and pepper.
- 36. Wash the parsley.
- 37. Shake the parsley dry.
- 38. Chop the parsley roughly.
- 39. Slice the soy sausages into thick rounds.
- 40. Plate the sausages on plates.
- 41. Add the baked beans.
- 42. Add the tomatoes and mushrooms.
- 43. Add one sunny-side-up egg each.
- 44. Garnish the dish with the parsley.
