Ingredients
- 3 Eggs
- 50 g Maple syrup
- Salt
- 1 Pinch Clove (ground)
- 1 Pinch Nutmeg (ground)
- 1 Pinch Cardamom (ground)
- 1 Organic Orange (Zest)
- 150 g Whole wheat flour
- 1 Packet Baking powder
- 50 g chopped Almond kernels
- 100 g chopped Walnuts
- 125 g dried Fig
- 125 g dried Dates
- 1 Piece Ginger (2 cm)
- 100 g Currants
- 100 g seedless Raisins
- Flour (for dusting)
Instructions
- 1. Preheat the oven to 180 degrees (160 degrees for fan-assisted or gas mark 2-3).
- 2. Whisk the eggs, maple syrup, spices, orange zest, wholemeal flour, and baking powder in a bowl until you have a smooth batter.
- 3. Stir the almonds and chopped walnuts into the batter.
- 4. Dice the figs and dates.
- 5. Finely chop the ginger.
- 6. Add the diced figs, dates, ginger, currants, and raisins to the batter.
- 7. Toss the fruit and nuts in a little flour to prevent them from sinking.
- 8. Gently fold the coated ingredients into the batter.
- 9. Pour the batter into a cake ring or cake tin.
- 10. Bake the cake for 50 minutes in the preheated oven.
- 11. Cover the cake with parchment paper after 50 minutes to prevent it from browning too much.
- 12. Continue baking for another 50 minutes (100 minutes in total).
- 13. Remove the tin from the oven.
- 14. Let the cake cool in the tin for 10 minutes.
- 15. Remove the cake from the tin.
- 16. Let the cake cool completely.
