🍽️ Energy Balls with Peanut Butter

Ingredients
- 160 g dried dates (pitted)
- 60 g peanut butter (unsweetened)
- 110 g rolled oats
- 1 tbsp ground flaxseeds (15 g each)
- 1 pinch salt
- 40 g peanuts
- 20 g cacao nibs
- 3 tbsp coconut flakes (15 g each)
Instructions
- 1. Soak the dates in warm water for 10 minutes. Then drain them in a sieve and collect the remaining water.
- 2. Puree the dates, peanut butter, and 2 tablespoons of the soaking water finely using a blender or chopper. Mix in the oats, flaxseeds, and salt, and knead everything into a sticky, moldable dough.
- 3. Chop the peanuts and fold them in along with the cacao nibs (small pieces of cocoa beans). Shape the mixture into walnut-sized balls using your hands.
- 4. Roll the power balls in shredded coconut. Place them on a plate and put them in the refrigerator for 30 minutes to firm up.
