🍽️ Crunchy date-almond balls with cocoa nibs

Ingredients
- 150 g dried fruit (75 g dates and apricots each)
- 100 g almond kernels
- 0.5 vanilla pod
- 25 g freeze-dried strawberries
- 1 pinch salt
- 30 g cocoa powder (highly defatted)
- 1 tbsp cocoa nibs (15 g each)
- 1 tbsp liquid coconut oil
Instructions
- 1. Remove the pits from the dates if they are still inside.
- 2. Cut the dates and apricots into coarse pieces.
- 3. Roughly chop the almonds.
- 4. Cut the vanilla pod lengthwise.
- 5. Scrape out the seeds (pulp) from the pod using a knife.
- 6. Chop the fresh strawberries.
- 7. Put the cut dried fruit into the blender.
- 8. Puree the fruit for a short time.
- 9. Add the chopped almonds to the blender.
- 10. Mix the almonds into the fruit.
- 11. Add a pinch of salt.
- 12. Add the vanilla seeds.
- 13. Add the cocoa powder.
- 14. Add the cocoa nibs.
- 15. Add 20 grams of dried strawberries.
- 16. Add the coconut oil.
- 17. Stir everything into a smooth mixture.
- 18. Check if the mixture is too firm.
- 19. If so, work in 1 to 2 tablespoons of water.
- 20. Divide the mixture into 16 equal portions.
- 21. Shape each portion into a ball.
- 22. Aim for a diameter of 2.5 to 3 centimeters.
- 23. Sprinkle the balls with the remaining strawberries.
- 24. Place the balls in candy cups.
- 25. Place the cups in the refrigerator for about 1 hour.
