🍽️ Crispy Turkey on Crispy Endive Salad

Ingredients
- 500 g turkey breast fillet
- 2 tbsp soy sauce
- 1 tbsp honey
- pepper
- 1 endive or frisée salad (small)
- 2 tbsp white wine vinegar
- 1 tbsp lime juice
- 5 tbsp germ oil
- salt
- 12 sage leaves
- 4 slices Parma ham
- 3 slices white bread
- butter (for frying)
Instructions
- 1. Rinse the turkey meat under running water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Cut the meat into wide strips.
- 4. Mix soy sauce, honey, and pepper in a bowl.
- 5. Add the turkey strips to the marinade and toss well to coat.
- 6. Let the meat marinate in the refrigerator for 1 hour.
- 7. Remove the meat from the marinade and let it drain briefly.
- 8. Rinse the endive salads under running water.
- 9. Remove the hard core end and any old leaves.
- 10. Spin the salads dry.
- 11. Cut the salads into bite-sized pieces.
- 12. Heat some butter in a large pan.
- 13. Fry the turkey strips on all sides over high heat.
- 14. Cut the ham into small, suitable pieces.
- 15. Cut the white bread into small cubes.
- 16. Fry the bread cubes in hot butter until golden brown.
- 17. Add the sage leaves in the last minute and fry them briefly.
- 18. Mix lime juice, vinegar, oil, salt, and pepper to make a dressing.
- 19. Toss the salad, sage leaves, croutons, and ham with the dressing.
- 20. Fill the salad into bowls.
- 21. Distribute the hot turkey strips on top.
- 22. Serve the dish immediately.
