  2. 2. Pat the meat completely dry with kitchen paper.
  3. 3. Cut the meat into wide strips.
  4. 4. Mix soy sauce, honey, and pepper in a bowl.
  5. 5. Add the turkey strips to the marinade and toss well to coat.
  6. 6. Let the meat marinate in the refrigerator for 1 hour.
  7. 7. Remove the meat from the marinade and let it drain briefly.
  8. 8. Rinse the endive salads under running water.
  9. 9. Remove the hard core end and any old leaves.
  10. 10. Spin the salads dry.
  11. 11. Cut the salads into bite-sized pieces.
  12. 12. Heat some butter in a large pan.
  13. 13. Fry the turkey strips on all sides over high heat.
  14. 14. Cut the ham into small, suitable pieces.
  15. 15. Cut the white bread into small cubes.
  16. 16. Fry the bread cubes in hot butter until golden brown.
  17. 17. Add the sage leaves in the last minute and fry them briefly.
  18. 18. Mix lime juice, vinegar, oil, salt, and pepper to make a dressing.
  19. 19. Toss the salad, sage leaves, croutons, and ham with the dressing.
  20. 20. Fill the salad into bowls.
  21. 21. Distribute the hot turkey strips on top.
  22. 22. Serve the dish immediately.
