🍽️ Fresh Endive Salad with Avocado

Ingredients
- 1 head endive
- 1 cucumber
- 1 avocado
- 40 g herbs (1 handful; basil and chives)
- 1 lime
- 200 g yogurt (3.5% fat)
- 1 tsp honey
- salt
- chili flakes
Instructions
- 1. Tear the endive leaves into bite-sized pieces.
- 2. Rinse the endive pieces thoroughly.
- 3. Spin the vegetables dry, for example in a salad spinner.
- 4. Rinse the cucumber under running water.
- 5. Slice the cucumber into thin rounds.
- 6. Halve the avocado and remove the pit.
- 7. Peel the avocado.
- 8. Slice the avocado flesh.
- 9. Rinse the herbs under running water.
- 10. Shake the herbs dry.
- 11. Pluck the basil leaves from the stems.
- 12. Chop the basil leaves coarsely.
- 13. Cut the chives into fine rings.
- 14. Rinse the lime with hot water.
- 15. Grate the lime zest finely.
- 16. Squeeze the lime juice.
- 17. Mix the yogurt with the lime zest and lime juice.
- 18. Stir the honey into the yogurt mixture.
- 19. Season the dressing with salt and chili.
- 20. Divide all prepared salad ingredients among four plates.
- 21. Drizzle the salad with the dressing.
- 22. Serve the salad immediately.
