🍽️ Enchiladas with Minced Meat Filling

Ingredients
- 300 g wheat flour
- 1 pinch salt
- 4 tbsp sunflower oil
- 100 ml water
- 1 lemon (juice and grated zest)
- 1 larger apple
- 1 onion
- 2 garlic cloves
- 2 tbsp sliced almond kernels
- 2 tbsp oil
- 400 g beef mince
- 2 tbsp chili strips (drained, pickled, from the jar)
- cinnamon (1/2 tsp each)
- 250 g peeled tomatoes (small can)
- 5 tbsp raisins
- salt
- pepper (from the mill)
- 1 ripe avocado
- 150 g sour cream
- Tabasco
- 2 spring onions
Instructions
- 1. Put flour, salt, oil, and water into a bowl.
- 2. Stir the ingredients together to form a smooth dough.
- 3. Knead the dough until it is smooth.
- 4. Cover the dough.
- 5. Let the dough rest for about 20 minutes.
- 6. Work the dough briefly on a lightly floured surface.
- 7. Divide the dough into 8 equal pieces.
- 8. Take a piece of dough and roll it out thinly with a rolling pin.
- 9. Make sure the flatbread is round and has a diameter of about 25 centimeters.
- 10. Repeat this with all the dough pieces.
- 11. Heat an uncoated pan without oil.
- 12. Fry a flatbread for about 1 minute on the first side.
- 13. Fry the flatbread for about 1 minute on the second side.
- 14. Make sure dark spots appear on the dough.
- 15. If the dough puffs up in the pan, press it flat with a spatula.
- 16. Fry all the flatbreads in this way.
- 17. Keep the finished tortillas warm.
- 18. Rinse the lime under hot water.
- 19. Grate the lime zest thinly.
- 20. Juice the lime.
- 21. Wash the apples.
- 22. Quarter the apples.
- 23. Remove the core of the apples.
- 24. Cut the apple flesh into small cubes.
- 25. Put the apple cubes immediately into a bowl.
- 26. Add 2 tablespoons of lime juice to the apple cubes.
- 27. Mix the apple cubes with the lime juice.
- 28. Peel the onion.
- 29. Dice the onion finely.
- 30. Heat a pan.
- 31. Put the sliced almonds into the hot pan without fat.
- 32. Toast the sliced almonds until golden brown.
- 33. Remove the toasted sliced almonds from the pan.
- 34. Set the sliced almonds aside.
- 35. Heat the oil in the pan.
- 36. Put the onions into the hot pan.
- 37. Sweat the onions until translucent.
- 38. Press the garlic into the pan.
- 39. Fry the minced meat until crumbly.
- 40. Take the drained chili strips.
- 41. Add the chili strips to the meat mixture.
- 42. Add cumin to the meat mixture.
- 43. Add cinnamon to the meat mixture.
- 44. Add tomatoes to the meat mixture.
- 45. Add the apple puree to the meat mixture.
- 46. Add raisins to the meat mixture.
- 47. Season the meat mixture with salt.
- 48. Season the meat mixture with pepper.
- 49. Simmer the meat mixture uncovered over low heat for about 15 minutes.
- 50. Taste the meat mixture at the end.
- 51. Halve the avocado.
- 52. Remove the pit of the avocado.
- 53. Scoop out the flesh of the avocado with a spoon.
- 54. Put the avocado flesh into a bowl.
- 55. Add 2 tablespoons of lemon juice to the avocado flesh.
- 56. Add the lemon zest to the avocado flesh.
- 57. Mix the avocado flesh with the lemon juice and zest.
- 58. Mash the avocado mixture with a fork.
- 59. Stir the cream into the avocado mixture.
- 60. Season the avocado mixture with salt.
- 61. Season the avocado mixture with pepper.
- 62. Season the avocado mixture with Tabasco.
- 63. Cover the bowl with the avocado mixture.
- 64. Set the bowl aside.
- 65. Trim the spring onions.
- 66. Wash the spring onions.
- 67. Slice the white and light green parts of the spring onions into thin rings.
- 68. Stir the spring onion rings into the avocado cream.
- 69. Take a tortilla.
- 70. Spread 2-3 tablespoons of the avocado cream onto the tortilla.
- 71. Leave a border around the edge of the tortilla.
- 72. Distribute the minced meat filling on the tortilla.
- 73. Roll the tortilla tightly.
- 74. Repeat this with all the tortillas.
- 75. Place the rolled tortillas on plates.
- 76. Garnish the tortillas with salad if desired.
- 77. Sprinkle the tortillas with the toasted sliced almonds.
