🍽️ Alsatian Onion Soup with Cheese Croutons

Ingredients
- 600 g onions
- 50 g butter
- 800 ml meat broth
- 150 ml dry red wine
- 1 pinch freshly ground nutmeg
- 0.5 tsp dried thyme
- 1 pinch ground cumin
- 100 g grated raclette cheese
- 1 bunch parsley
- 12 baguette slices
- 2 garlic cloves
- salt
- pepper (from the mill)
Instructions
- 1. Peel the onions and slice them into thin strips.
- 2. Heat the butter in a pot.
- 3. Sauté the onions in it until they are translucent.
- 4. Pour in the broth and the wine.
- 5. Add nutmeg, thyme, and caraway seeds.
- 6. Let the soup simmer for 25 minutes.
- 7. Preheat the oven grill.
- 8. Toast the baguette slices.
- 9. Rub the peeled garlic cloves over the toast slices.
- 10. Press the garlic through a press directly into the soup.
- 11. Season the soup with salt and pepper.
- 12. Fill the soup into heatproof soup bowls.
- 13. Top the bowls with the baguette slices and the cheese.
- 14. Gratin the soups in the preheated oven until golden brown.
- 15. Serve the soup immediately.
