🍽️ Alsatian Flammkuchen with Spicy Sausage and Onions

Ingredients
- 400 g flour
- 1 packet dry yeast (approx. 7 g)
- 1 tsp salt
- 1 tsp sugar
- flour (for working)
- 300 g paprika sausage
- 2 onions
- 200 g low-fat quark
- 200 g crème fraîche
- 1 egg yolk
- 1 tsp dried oregano
- salt
- pepper (from the mill)
- 16 green pickled chili peppers (jar)
Instructions
- 1. Mix the flour with the yeast, salt, and sugar in a bowl.
- 2. Pour in about 225 ml of lukewarm water.
- 3. Knead the ingredients into a medium-firm dough until it pulls away from the sides of the bowl.
- 4. Cover the bowl and let the dough rise in a warm place for about 30 minutes.
- 5. Place a baking sheet in the oven and preheat the oven to 240°C using bottom and top heat.
- 6. Sprinkle some flour on a work surface.
- 7. Divide the dough into four parts and roll each part into a thin flatbread.
- 8. Cut baking paper to the size of your baking sheet.
- 9. Place the dough flatbreads onto the cut baking paper.
- 10. Remove the sausage from its casing and slice it into thin rounds.
- 11. Peel the onions and cut them into thin wedges.
- 12. Whisk the quark, crème fraîche, oregano, and egg yolk together in a bowl.
- 13. Season the quark mixture with salt and pepper.
- 14. Spread the quark mixture evenly over the dough flatbreads.
- 15. Leave a small border around the edge of the dough.
- 16. Distribute the onion wedges, sausage slices, and peppers over the topping.
- 17. Slide the flammkuchen into the preheated oven.
- 18. Bake the flammkuchen for 10 to 15 minutes until golden brown.
- 19. Remove the finished flammkuchen from the oven.
- 20. Serve them immediately while warm.
