🍽️ Rum Fruit Ice Cream with Fresh Peaches

Ingredients
- 100 ml Milk
- 0.5 Vanilla pod
- 3 Egg yolks
- 60 g Sugar
- 500 ml Whipping cream
- 2 Peaches
- 50 g Blackberries
- 150 g Rum jar fruit
- Ice cream waffle
Instructions
- 1. Slice the vanilla pod lengthwise.
- 2. Scrape out the tiny seeds from the pod.
- 3. Heat the milk together with the vanilla seeds and the empty pod.
- 4. Whisk the egg yolks with the sugar in a separate bowl.
- 5. Remove the vanilla pod from the hot milk.
- 6. Slowly stir the hot milk into the egg-sugar mixture.
- 7. Place the bowl over a pot of hot water (bain-marie).
- 8. Whisk the mixture over the hot water until it becomes thick and creamy.
- 9. Let the cream cool down while stirring constantly.
- 10. Let the rum fruits drain slightly.
- 11. Chop the fruits finely.
- 12. Whip the cream until stiff.
- 13. Gently fold the chopped fruits into the cooled cream.
- 14. Pour the mixture into a metal container.
- 15. Let the mixture freeze in the ice cream maker for 3 hours.
- 16. Make small cuts in the peach skins.
- 17. Pour boiling water over the peaches.
- 18. Peel the skin off the peaches.
- 19. Cut the peaches into wedges.
- 20. Wash the blackberries.
- 21. Pat the blackberries dry.
- 22. Scoop the ice cream with an ice cream scoop.
- 23. Serve the ice cream with the peach wedges, blackberries, and waffles.
