🍰 Licorice Pops with Vanilla Cream

Ingredients
- 250 ml Milk
- 250 ml Heavy cream
- 1 Vanilla pod
- 2 Egg yolks
- 1 Egg
- 4 Licorice syrup
Instructions
- 1. Pour the milk and cream into a pot.
- 2. Cut the vanilla pod lengthwise.
- 3. Scrape out the seeds and add them along with the empty pod to the milk-cream mixture.
- 4. Bring the mixture to a boil.
- 5. In a separate bowl, whisk the egg yolks, the whole egg, and the syrup until the mixture is white and creamy.
- 6. Slowly stir the hot milk into the egg mixture.
- 7. Pour everything back into the pot.
- 8. Remove the vanilla pod.
- 9. Heat the cream over low heat while stirring constantly with a wooden spoon.
- 10. Wait until the cream thickens (it should coat the back of a spoon like a 'rose'), but make sure it does not boil again.
- 11. Strain the cream.
- 12. Let the cream cool down.
- 13. Pour the cooled cream into four small ice cream molds.
- 14. Place them in the freezer compartment for about 1 hour to let them set slightly.
- 15. Insert a stick of licorice (sweet root) into each ice cream.
- 16. Let them freeze completely for at least 3 hours.
- 17. Remove the ice cream portions from the molds.
- 18. Serve immediately.
