  3. 3. Insert an oyster knife firmly into the hinge at the back.
  4. 4. Twist the knife to pry the shell open.
  5. 5. Cut the top muscle from the shell.
  6. 6. Remove the top shell.
  7. 7. Cut the bottom muscle from the bottom shell.
  8. 8. Keep the oyster liquor in the shell.
  9. 9. Gently clean the oyster with your finger to remove any shell fragments.
  10. 10. Arrange the finished oysters on a plate with crushed ice.
  11. 11. Whisk together vinegar, mustard, sugar, a pinch of salt, and pepper in a bowl.
  12. 12. Slowly beat in the oil with a whisk.
  13. 13. Continue stirring until a creamy mixture forms.
  14. 14. Stir in the finely chopped herbs.
  15. 15. Adjust the sauce to taste with more salt and pepper.
  16. 16. Transfer the sauce to a small serving bowl.
  17. 17. Mix all ingredients for the second sauce thoroughly.
  18. 18. Season the sauce to taste with a few drops of Tabasco sauce.
  19. 19. Fill the sauce into a small bowl.
  20. 20. Garnish the sauce with fine lemon zest.
