  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the meat into small slices.
  4. 4. Peel the onions.
  5. 5. Dice the onions finely.
  6. 6. Peel the carrots and the potatoes.
  7. 7. Rinse the peeled vegetables.
  8. 8. Cut the carrots and potatoes into large chunks.
  9. 9. Heat the ghee in a pot.
  10. 10. Fry the meat on all sides until well browned.
  11. 11. Remove the meat from the pot.
  12. 12. Set the meat aside for a moment.
  13. 13. Add the onions to the pot.
  14. 14. Sauté the onions until golden brown.
  15. 15. Dust the onions with the flour.
  16. 16. Deglaze the mixture with the meat broth.
  17. 17. Stir the mixture well.
  18. 18. Make sure no lumps form.
  19. 19. Place the meat back into the pot.
  20. 20. Season the stew with salt and pepper.
  21. 21. Simmer the stew over medium heat for 1 hour.
  22. 22. Add the vegetables to the stew.
  23. 23. Let the stew simmer for another 25 minutes.
  24. 24. Taste the stew again and adjust seasoning if needed.
  25. 25. Sprinkle the stew with parsley.
