🍲 Irish-style stew with carrots and potatoes

Ingredients
- 800 g lamb meat (from the leg)
- 4 onions
- 2 carrots
- 400 g waxy potatoes
- 30 g ghee
- 1.5 tbsp flour
- 600 ml meat broth
- salt
- pepper (from the mill)
- 1 tbsp freshly chopped parsley
Instructions
- 1. Rinse the meat under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the meat into small slices.
- 4. Peel the onions.
- 5. Dice the onions finely.
- 6. Peel the carrots and the potatoes.
- 7. Rinse the peeled vegetables.
- 8. Cut the carrots and potatoes into large chunks.
- 9. Heat the ghee in a pot.
- 10. Fry the meat on all sides until well browned.
- 11. Remove the meat from the pot.
- 12. Set the meat aside for a moment.
- 13. Add the onions to the pot.
- 14. Sauté the onions until golden brown.
- 15. Dust the onions with the flour.
- 16. Deglaze the mixture with the meat broth.
- 17. Stir the mixture well.
- 18. Make sure no lumps form.
- 19. Place the meat back into the pot.
- 20. Season the stew with salt and pepper.
- 21. Simmer the stew over medium heat for 1 hour.
- 22. Add the vegetables to the stew.
- 23. Let the stew simmer for another 25 minutes.
- 24. Taste the stew again and adjust seasoning if needed.
- 25. Sprinkle the stew with parsley.
- 26. Serve the stew.
