🍲 Cozy Sausage and Leek Stew

Ingredients
- 1 stalk leek
- 2 cloves garlic
- 2 tbsp olive oil
- 600 g sausages (e.g. Cabanossi)
- 800 ml vegetable broth
- salt
- pepper (from the mill)
- 250 g cherry tomatoes
- 3 tbsp crème fraîche
- 2 tbsp freshly chopped basil
- 50 g freshly grated Parmesan
Instructions
- 1. Rinse the leek thoroughly and cut it lengthwise.
- 2. Remove the tough green tops and the outer layer from the leek.
- 3. Slice the leek into thin rings.
- 4. Peel the garlic clove and chop it finely.
- 5. Heat some oil in a large pot.
- 6. Sauté the leek and garlic in the hot oil until they are soft and translucent.
- 7. Remove the sausage from its casing.
- 8. Cut the sausage into bite-sized pieces.
- 9. Add the sausage pieces to the leek in the pot.
- 10. Fry the sausage briefly with the leek.
- 11. Deglaze the mixture with the broth.
- 12. Season the stew with salt and pepper.
- 13. Let the stew simmer on medium heat for about 15 minutes.
- 14. Wash the tomatoes.
- 15. Cut the tomatoes in half.
- 16. Stir the crème fraîche into the stew.
- 17. Add the halved tomatoes to the pot.
- 18. Taste the stew and adjust the seasoning with salt and pepper if needed.
- 19. Sprinkle the dish with fresh basil.
- 20. Add grated Parmesan cheese on top.
- 21. Serve the stew hot.
- 22. Optionally serve with spirelli (twisted pasta).
