  1. 1. Rinse the leek thoroughly and cut it lengthwise.
  2. 2. Remove the tough green tops and the outer layer from the leek.
  3. 3. Slice the leek into thin rings.
  4. 4. Peel the garlic clove and chop it finely.
  5. 5. Heat some oil in a large pot.
  6. 6. Sauté the leek and garlic in the hot oil until they are soft and translucent.
  7. 7. Remove the sausage from its casing.
  8. 8. Cut the sausage into bite-sized pieces.
  9. 9. Add the sausage pieces to the leek in the pot.
  10. 10. Fry the sausage briefly with the leek.
  11. 11. Deglaze the mixture with the broth.
  12. 12. Season the stew with salt and pepper.
  13. 13. Let the stew simmer on medium heat for about 15 minutes.
  14. 14. Wash the tomatoes.
  15. 15. Cut the tomatoes in half.
  16. 16. Stir the crème fraîche into the stew.
  17. 17. Add the halved tomatoes to the pot.
  18. 18. Taste the stew and adjust the seasoning with salt and pepper if needed.
  19. 19. Sprinkle the dish with fresh basil.
  20. 20. Add grated Parmesan cheese on top.
  21. 21. Serve the stew hot.
