🍲 Hearty Turnip Stew with Pork

Ingredients
- 250 g smoked pork belly
- 500 g pork neck
- 1 onion
- 1 clove garlic
- 400 g rutabaga
- 2 carrots
- 200 g floury potatoes
- 200 g green beans
- 2 tbsp ghee
- 1 tbsp tomato paste
- 200 ml dry white wine
- 250 ml meat broth
- 1 sprig rosemary
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the pork under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the pork into small cubes.
- 4. Wash the onion, garlic, turnips, carrots, potatoes, and beans.
- 5. Peel the turnips, carrots, and potatoes.
- 6. Trim the beans if necessary.
- 7. Dice the onion, garlic, turnips, carrots, and potatoes.
- 8. Break the beans into bite-sized pieces.
- 9. Heat lard in a pot.
- 10. Brown the meat in the hot lard.
- 11. Add the chopped vegetables to the meat.
- 12. Sauté the vegetables briefly.
- 13. Stir in the tomato paste.
- 14. Deglaze the mixture with the wine.
- 15. Pour in the meat broth.
- 16. Strip the rosemary needles from the stems.
- 17. Stir the rosemary needles into the stew.
- 18. Season the stew with salt and pepper.
- 19. Cover the pot.
- 20. Let the stew simmer for approx. 50 minutes.
- 21. Stir the stew occasionally.
- 22. Taste the stew at the end and adjust seasoning.
- 23. Serve the stew hot.
