  1. 1. Wash the onion and the celery stalk. Peel the celery and cut both into very small cubes.
  2. 2. Wash the chili pepper. Cut it in half lengthwise, remove the seeds, and finely chop the flesh.
  3. 3. Heat the oil in a pot. Add the onions, celery, and chili, and sauté briefly until they become transparent.
  4. 4. Deglaze the mixture with the vegetable broth. Let the stew simmer on low heat for about 10 minutes.
  5. 5. Wash the green beans and remove the tough ends. Boil them in salted water for approx. 8 minutes until tender-crisp.
  6. 6. Rinse the white beans in a colander with cold water.
  7. 7. Add the green and white beans to the stew. Let them just heat through briefly.
  8. 8. Wash the parsley, pick the leaves, and stir them into the soup. Season with salt to taste.
  9. 9. Serve the stew in bowls. Crumble the feta cheese on top.
  10. 10. Serve the dish with toasted bread if desired.
