🍲 Creamy stew with green and white beans

Ingredients
- 1 onion
- 2 stalks celery
- 1 green chili pepper
- 2 tbsp olive oil
- 800 ml vegetable broth
- 500 g green beans
- 400 g white beans (can)
- 2 tbsp freshly chopped parsley
- salt
- 150 g feta
Instructions
- 1. Wash the onion and the celery stalk. Peel the celery and cut both into very small cubes.
- 2. Wash the chili pepper. Cut it in half lengthwise, remove the seeds, and finely chop the flesh.
- 3. Heat the oil in a pot. Add the onions, celery, and chili, and sauté briefly until they become transparent.
- 4. Deglaze the mixture with the vegetable broth. Let the stew simmer on low heat for about 10 minutes.
- 5. Wash the green beans and remove the tough ends. Boil them in salted water for approx. 8 minutes until tender-crisp.
- 6. Rinse the white beans in a colander with cold water.
- 7. Add the green and white beans to the stew. Let them just heat through briefly.
- 8. Wash the parsley, pick the leaves, and stir them into the soup. Season with salt to taste.
- 9. Serve the stew in bowls. Crumble the feta cheese on top.
- 10. Serve the dish with toasted bread if desired.
