🍲 Vegetable stew with celery, tomato and pepper

Ingredients
- 5 tomatoes
- 300 g celeriac
- 200 g carrots
- 2 shallots
- 2 green bell peppers
- 2 tbsp olive oil
- 800 ml vegetable broth
- 0.5 tsp ground cumin
- 2 tbsp chopped parsley
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Immediately plunge the tomatoes into cold water to stop the cooking process.
- 3. Peel the skin off the tomatoes.
- 4. Cut the tomatoes into quarters and remove the seeds.
- 5. Finely dice the tomato flesh.
- 6. Clean the celery and carrots.
- 7. Peel the vegetables.
- 8. Dice the celery and carrots into small pieces.
- 9. Peel the shallots.
- 10. Finely chop the shallots.
- 11. Wash the peppers.
- 12. Halve the peppers and remove the seeds.
- 13. Dice the peppers.
- 14. Heat the oil in a pot.
- 15. Sauté the shallots until translucent.
- 16. Add the remaining vegetables to the pot.
- 17. Fry the vegetables while stirring for 5 minutes.
- 18. Pour in the broth.
- 19. Season the stew with cumin.
- 20. Simmer the stew covered for 15 minutes.
- 21. Season the stew to taste with salt and pepper.
- 22. Sprinkle the finished stew with parsley.
- 23. Serve the stew.
