  1. 1. Rinse the pumpkin under running water.
  2. 2. Peel off the skin if it is thick.
  3. 3. Cut the flesh into small cubes.
  4. 4. Place the pumpkin cubes in a pot.
  5. 5. Pour in enough water to just cover the cubes.
  6. 6. Add wine vinegar, sugar, salt, cinnamon, and cloves to the pot.
  7. 7. Peel the ginger.
  8. 8. Cut the ginger into thin strips.
  9. 9. Add the ginger strips to the pot as well.
  10. 10. Bring the mixture to a boil over medium heat.
  11. 11. Let the mixture simmer for 6 to 8 minutes.
  12. 12. Immediately fill the hot mixture into preserving jars.
  13. 13. Seal the jars tightly.
