🍽️ Pickled Onions with Radishes

Ingredients
- 200 ml red wine vinegar
- 100 g honey
- 1 tbsp salt
- 1 tbsp mustard seeds
- 5 juniper berries
- 500 g radishes
- 500 g shallots
- 3 sprigs cilantro
- 3 chives
Instructions
- 1. Add the vinegar, 200 milliliters of water, the honey, the salt, and the mustard to a pot.
- 2. Add the juniper berries and bring the mixture to a boil.
- 3. Wash the radishes, remove the stems, and cut them in half.
- 4. Peel the shallots and slice them into rings.
- 5. Add the radishes and the shallots to the boiling liquid.
- 6. Let the mixture boil again briefly.
- 7. Remove the vegetables from the liquid using a slotted spoon.
- 8. Fill the vegetables into the prepared jar.
- 9. Rinse the herbs briefly under running water.
- 10. Shake the herbs dry.
- 11. Cut the chives into small rings.
- 12. Add the remaining herbs to the liquid.
- 13. Bring the liquid to a boil again.
- 14. Pour the hot liquid over the vegetables in the jar.
- 15. Make sure the vegetables are completely covered.
- 16. Seal the jar tightly immediately.
- 17. Let the jar cool down at room temperature.
- 18. Store the jar in a cool and dark place.
