  1. 1. Thoroughly wash the gooseberries under running water.
  2. 2. Remove the stems and the dried blossom ends from the berries.
  3. 3. Let the prepared berries drain well in a sieve.
  4. 4. Add 150 milliliters of water, the lemon juice, the sliced vanilla pod, and the honey to a pot.
  5. 5. Bring the liquid to a boil on the stove.
  6. 6. Add the drained gooseberries to the boiling liquid.
  7. 7. Let the mixture come to a boil again briefly.
  8. 8. Remove the pot from the heat source immediately.
  9. 9. Remove the cooked vanilla pod from the mixture.
  10. 10. Fill the warm compote into well-rinsed and dry jars.
  11. 11. Seal the jars tightly with lids.
  12. 12. Let the jars cool down completely at room temperature.
  13. 13. Store the finished jars in a cool and dark place.
