🍽️ Vanilla Peaches for Preserving

Ingredients
- 1 kg ripe peaches
- 1 vanilla pod
- 4 tbsp lemon juice
- 500 g preserving sugar
Instructions
- 1. Score a cross shape into the bottom of the peaches.
- 2. Submerge the peaches in boiling water for 30 to 60 seconds.
- 3. Remove the peaches and shock them immediately.
- 4. Peel the skin off the peaches.
- 5. Halve the peaches and remove the pits.
- 6. Slice the vanilla pod lengthwise.
- 7. Scrape out the vanilla seeds from the pod.
- 8. Place the peaches, vanilla seeds, and empty pod into a bowl.
- 9. Add the lemon juice and sugar.
- 10. Mix everything thoroughly.
- 11. Cover the bowl.
- 12. Let the mixture infuse for at least 4 hours, preferably overnight.
- 13. Transfer the peaches and liquid to a pot.
- 14. Bring the mixture to a boil over medium heat.
- 15. Simmer the peaches over low heat for 1 to 2 minutes.
- 16. Remove the peach halves from the pot.
- 17. Layer the peach halves into the jars.
- 18. Boil the syrup over high heat until it reduces by about one quarter.
- 19. Pour the hot syrup over the peaches in the jars.
- 20. Ensure the peaches are completely covered.
- 21. Seal the jars tightly.
- 22. Let the jars cool down.
