  1. 1. Score a cross shape into the bottom of the peaches.
  2. 2. Submerge the peaches in boiling water for 30 to 60 seconds.
  3. 3. Remove the peaches and shock them immediately.
  4. 4. Peel the skin off the peaches.
  5. 5. Halve the peaches and remove the pits.
  6. 6. Slice the vanilla pod lengthwise.
  7. 7. Scrape out the vanilla seeds from the pod.
  8. 8. Place the peaches, vanilla seeds, and empty pod into a bowl.
  9. 9. Add the lemon juice and sugar.
  10. 10. Mix everything thoroughly.
  11. 11. Cover the bowl.
  12. 12. Let the mixture infuse for at least 4 hours, preferably overnight.
  13. 13. Transfer the peaches and liquid to a pot.
  14. 14. Bring the mixture to a boil over medium heat.
  15. 15. Simmer the peaches over low heat for 1 to 2 minutes.
  16. 16. Remove the peach halves from the pot.
  17. 17. Layer the peach halves into the jars.
  18. 18. Boil the syrup over high heat until it reduces by about one quarter.
  19. 19. Pour the hot syrup over the peaches in the jars.
  20. 20. Ensure the peaches are completely covered.
  21. 21. Seal the jars tightly.
  22. 22. Let the jars cool down.
