  1. 1. Wash the tomatoes thoroughly and let them drain.
  2. 2. Press the garlic flat with the side of a knife.
  3. 3. Mix the water, vinegar, garlic, coconut blossom sugar, and salt together in a pot.
  4. 4. Bring the liquid to a boil while stirring occasionally.
  5. 5. Let the broth steep for 5 minutes.
  6. 6. Add the tomatoes to the broth and bring them to a brief boil.
  7. 7. Place the thyme into the prepared, hot-rinsed jars.
  8. 8. Fill the jars with the tomatoes.
  9. 9. Bring the broth to a boil once more.
  10. 10. Pour the hot broth over the tomatoes until they are completely covered.
  11. 11. Seal the jars tightly.
