🍽️ Pickled Tomatoes

Ingredients
- 500 g small tomatoes (green and red)
- 4 garlic cloves
- 100 ml water
- 100 ml wine vinegar
- 80 g coconut blossom sugar
- 0.5 tsp salt
- 4 sprigs thyme
Instructions
- 1. Wash the tomatoes thoroughly and let them drain.
- 2. Press the garlic flat with the side of a knife.
- 3. Mix the water, vinegar, garlic, coconut blossom sugar, and salt together in a pot.
- 4. Bring the liquid to a boil while stirring occasionally.
- 5. Let the broth steep for 5 minutes.
- 6. Add the tomatoes to the broth and bring them to a brief boil.
- 7. Place the thyme into the prepared, hot-rinsed jars.
- 8. Fill the jars with the tomatoes.
- 9. Bring the broth to a boil once more.
- 10. Pour the hot broth over the tomatoes until they are completely covered.
- 11. Seal the jars tightly.
