🍽️ Fresh Sardines in Herb Marinade

Ingredients
- 500 g fresh sardines (ready for the kitchen)
- 1 bulb small fennel (finely diced)
- 1 onion (finely chopped)
- 1 tsp peppercorns
- 250 ml dry white wine
- 1 lemon (sliced)
- salt
- 0.5 bunch parsley (use the finely chopped leaves)
- 1 garlic clove
- 125 ml olive oil
Instructions
- 1. Rinse the sardines under cold water.
- 2. Dry the fish thoroughly with a kitchen towel.
- 3. Cut the fish open along the belly.
- 4. Unfold the fish flat.
- 5. Carefully remove the bones using your thumbs.
- 6. Place fennel, onions, and peppercorns in a pot.
- 7. Pour in a quarter liter of water, lemon slices, and wine.
- 8. Let the mixture simmer gently for about five minutes.
- 9. Season the liquid with salt.
- 10. Remove the pot from the heat.
- 11. Place the fish in the warm liquid for one to two minutes.
- 12. Remove the fish from the liquid.
- 13. Let the fish cool down.
- 14. Arrange the fish together with the vegetables in a shallow dish.
- 15. Mix the fennel vegetables without the lemon slices with oil.
- 16. Add chopped parsley and pressed garlic to the mixture.
- 17. Pour the marinade over the sardines.
- 18. Let the fish marinate for about four hours.
- 19. Turn the fish occasionally.
