  2. 2. Dry the fish thoroughly with a kitchen towel.
  3. 3. Cut the fish open along the belly.
  4. 4. Unfold the fish flat.
  5. 5. Carefully remove the bones using your thumbs.
  6. 6. Place fennel, onions, and peppercorns in a pot.
  7. 7. Pour in a quarter liter of water, lemon slices, and wine.
  8. 8. Let the mixture simmer gently for about five minutes.
  9. 9. Season the liquid with salt.
  10. 10. Remove the pot from the heat.
  11. 11. Place the fish in the warm liquid for one to two minutes.
  12. 12. Remove the fish from the liquid.
  13. 13. Let the fish cool down.
  14. 14. Arrange the fish together with the vegetables in a shallow dish.
  15. 15. Mix the fennel vegetables without the lemon slices with oil.
  16. 16. Add chopped parsley and pressed garlic to the mixture.
  17. 17. Pour the marinade over the sardines.
  18. 18. Let the fish marinate for about four hours.
  19. 19. Turn the fish occasionally.
