🍽️ Marinated Sardines with Herbs and Lemon Oil

Ingredients
- 600 g fresh sardine fillets (kitchen-ready)
- 1 onion (coarsely chopped)
- 1 carrot (peeled and finely diced)
- sage leaf
- 1 tsp peppercorns
- 250 ml dry white wine
- 1 lemon (juice and grated zest)
- salt
- 250 g pickled pepper strips (from the jar)
- 1 bunch parsley (finely chopped)
- 2 tsp fennel seeds
- 125 ml olive oil
Instructions
- 1. Cut the carrot and the onion into small pieces.
- 2. Place the carrot, onion, sage leaves, and peppercorns in a pot.
- 3. Pour in 250 milliliters of water, the lemon juice, and the wine.
- 4. Let the mixture simmer gently for about 10 minutes.
- 5. Season the broth with salt and remove the pot from the heat.
- 6. Place the sardines in the hot broth and let them steep for about 2 minutes.
- 7. Remove the fish from the broth and let them cool down.
- 8. Place the cooled sardines in a shallow dish.
- 9. Mix the oil with the fennel.
- 10. Pour the oil and fennel mixture over the sardines.
- 11. Let the sardines marinate for about 4 hours.
- 12. Turn the fish a few times during the marinating process.
- 13. Arrange the sardines on a shallow plate for serving.
- 14. Decorate the dish with strips of bell pepper.
- 15. Sprinkle everything with lemon zest.
