  1. 1. Pour boiling water over the pearl onions.
  2. 2. Peel off the outer skin of the onions.
  3. 3. Place the peeled onions into boiling salted water.
  4. 4. Blanch the onions for 2 minutes (cook briefly in boiling water).
  5. 5. Remove the onions from the water and let them drain.
  6. 6. Add vinegar, salt, sugar, peppercorns, cloves, and chili peppers to a pot.
  7. 7. Bring the spice liquid to a boil.
  8. 8. Fill the warm pearl onions into a previously rinsed with hot water and sterilized jar.
  9. 9. Pour the hot vinegar broth over the onions until they are completely covered.
  10. 10. Seal the jar tightly.
  11. 11. Let the onions infuse for 2 weeks before consuming.
