  3. 3. Wash the thyme sprigs and shake them dry.
  4. 4. Wash the basil and shake it dry as well.
  5. 5. Finely chop the basil leaves.
  6. 6. Place the olives, garlic, chili peppers, thyme sprigs, and chopped basil into clean, boiled bottles.
  7. 7. Pour the oil over the ingredients in the bottles.
  8. 8. Store the bottles in a cool place; the oil will keep for about 6 weeks.
