  1. 1. Thoroughly rinse the herrings under running water.
  2. 2. Cut off all fins except for the tail fin.
  3. 3. Rub the herrings inside and out generously with salt.
  4. 4. Pour the flour onto a flat plate.
  5. 5. Coat four herrings in the flour so they are completely covered.
  6. 6. Shake off any excess flour from the fish.
  7. 7. Heat four tablespoons of germ oil in a large non-stick pan.
  8. 8. Fry the four herrings for about five minutes on each side at medium heat until golden brown.
  9. 9. Place the fried herrings on a draining rack.
  10. 10. Let the fish drain and cool down completely.
  11. 11. Pour the frying oil out of the pan.
  12. 12. Clean the pan thoroughly with kitchen paper.
  13. 13. Coat the remaining herrings in flour as well.
  14. 14. Fry the remaining herrings in the remaining oil in the same way.
  15. 15. Add peppercorns, mustard seeds, juniper berries, and bay leaves to a pot.
  16. 16. Pour the broth and vinegar over the spices in the pot.
  17. 17. Bring the liquid to a boil.
  18. 18. Peel the onions.
  19. 19. Slice the onions into thin rings.
  20. 20. Add the onion rings to the boiling vinegar broth.
  21. 21. Let the broth come to a boil once.
  22. 22. Reduce the heat to low and let the broth simmer covered for about ten minutes.
  23. 23. Then let the broth cool down completely.
  24. 24. Season the cold broth with salt to taste.
  25. 25. Place the fried herrings in a rectangular dish with a capacity of about 1.5 liters.
  26. 26. Pour the cold broth completely over the herrings.
  27. 27. Let the herrings marinate in the broth for at least one day.
  28. 28. Take the pickled herrings out of the broth.
  29. 29. Let the herrings drain well.
  30. 30. Serve the herrings garnished with the onion rings.
