🍽️ Pickled Fried Herring

Ingredients
- 8 Herrings (approx. 1 kg, kitchen-ready, without heads)
- Salt
- 30 g Spelt flour Type 1050
- 8 tbsp Germ oil
- 1 tbsp black peppercorns
- 1 tbsp Mustard seeds
- 8 Juniper berries
- 2 Bay leaves
- 250 ml classic vegetable broth
- 250 ml White wine vinegar
- 150 g Onions (3 Onions)
Instructions
- 1. Thoroughly rinse the herrings under running water.
- 2. Cut off all fins except for the tail fin.
- 3. Rub the herrings inside and out generously with salt.
- 4. Pour the flour onto a flat plate.
- 5. Coat four herrings in the flour so they are completely covered.
- 6. Shake off any excess flour from the fish.
- 7. Heat four tablespoons of germ oil in a large non-stick pan.
- 8. Fry the four herrings for about five minutes on each side at medium heat until golden brown.
- 9. Place the fried herrings on a draining rack.
- 10. Let the fish drain and cool down completely.
- 11. Pour the frying oil out of the pan.
- 12. Clean the pan thoroughly with kitchen paper.
- 13. Coat the remaining herrings in flour as well.
- 14. Fry the remaining herrings in the remaining oil in the same way.
- 15. Add peppercorns, mustard seeds, juniper berries, and bay leaves to a pot.
- 16. Pour the broth and vinegar over the spices in the pot.
- 17. Bring the liquid to a boil.
- 18. Peel the onions.
- 19. Slice the onions into thin rings.
- 20. Add the onion rings to the boiling vinegar broth.
- 21. Let the broth come to a boil once.
- 22. Reduce the heat to low and let the broth simmer covered for about ten minutes.
- 23. Then let the broth cool down completely.
- 24. Season the cold broth with salt to taste.
- 25. Place the fried herrings in a rectangular dish with a capacity of about 1.5 liters.
- 26. Pour the cold broth completely over the herrings.
- 27. Let the herrings marinate in the broth for at least one day.
- 28. Take the pickled herrings out of the broth.
- 29. Let the herrings drain well.
- 30. Serve the herrings garnished with the onion rings.
