  7. 7. Wash the apricots thoroughly.
  8. 8. Pour boiling water over the fruit.
  9. 9. Peel the skin off the apricots.
  10. 10. Cut the apricots in half.
  11. 11. Remove the stones from the fruit halves.
  12. 12. Cut the cinnamon sticks and star anise in half.
  13. 13. Place the apricot halves into a clean jar.
  14. 14. Distribute the spice pieces between the apricots in the jar.
  15. 15. Let the syrup cool down.
  16. 16. Pour the cooled syrup over the apricots.
  17. 17. Fill the jar with the syrup.
  18. 18. Seal the jar tightly.
  19. 19. Let the apricots infuse in the jar for about three weeks.
